It's good to have an evolution in hand since it influences what you do the following turns. You can start Caterpie to keep Exeggcute fresh, then X Speed it out to fresh Exeggcute, evolve, and attack. Use Professor's Research to hopefully get Metapod.

This alternative starting hand is similar to the one above but has Erika and a Potion to keep your Pokemon healthy. Use Professor's Research to help you dig resources, such as more Potions or a Suppoter Pokemon for the next turn.

If you have Exeggutor and Exeggutor ex in your hand, put them in the battlefield right away. This allows you to attack with just 1 energy and put pressure on your opponent before they can get ready.
If you don't have Exeggutor ex in your hand, don't put Exeggutor in the field yet. Instead, use Caterpie's Find a Friend to bring out Exeggcute, allowing you to evolve Exeggcute into Exeggutor ex the following turn, and immediately go on the attack.
Caterpie and Exeggutor only have 50 HP, so you shouldn't leave them on the field for too long.
If you can put two Exeggutor ex and a Butterfree on the field, you'll be able to fight and heal simultaneously. Fight using one Exeggutor while attaching energy to it, and when one of the Exeggutor's HP becomes low, replace Exeggutor that's on the bench with Butterfree to heal the whole team via its Powder Heal ability. This works in conjunction with Erika which can keep your Pokemon healthy.

An Exeggutor ex Deck banks on bringing out Exeggutor ex early on to put pressure on the opponent. Although the deck sounds strong due to the damage it can deal early on, Exeggutor ex's damage power greatly depends on the coin flip, making the deck inconsistent.
Moreover, since Exeggutor ex and Butterfree are both evolution Pokemon, there is a lack of strong Basic Pokemon in the deck, so it is important to keep them from getting KOd in early turns before they have evolved.

Adding the Victreebel evolution line to the deck makes the deck more consistent in terms of damage. It also gives the deck a better late-game thanks to Victreebel's Fragrance Trap Ability, forcing the opponent to switch its active card with a basic benched card and allowing you to finish it off.
