The Pioneer Woman’s Midnight Toast Is the Ultimate Nighttime Snack or Morning Treat Before Work
When you’re feeling snacky but know chips or crackers won’t cut it, then it’s time to whip up The Pioneer Woman’s Midnight Toast. It’s a satisfying snack that’s just as good in the middle of the night as it is in the morning and it’s so much better for you than a handful of potato chips.
“It’s really a great snack to eat when you’re by yourself trying to hammer out a deadline, whether it’s at midnight or in the morning, it is absolutely delicious,” Drummond said in a clip from Food Network’s The Pioneer Woman.

To make Midnight Toast, start by putting a couple of slices of bread in the toaster while frying up a few slices of bacon. “Who doesn’t love bacon at midnight?” Drummond said in the clip. Midnight Toast also has a lot of avocado on it, so Drummond prepares that while the bacon finishes frying. She seasons her avocado with salt and pepper before mashing it with a fork.
It’s finally time to build the toast. First, spread a layer of your mashed avocado onto the toast, then layer your hot and crispy bacon on top. Drummond then likes to add mini pickled piquant red peppers and a drizzle of sriracha over the entire thing for a little kick of heat. But you can choose whatever toppings suit your appetite — grated cheese would work well, as would diced tomatoes or salsa, or a drizzle of aioli. And, of course, you can easily make this into a breakfast dish by adding a couple of fried eggs on top!
