Noma Projects was founded in 2022 to share the knowledge, innovations and flavours of noma beyond the four walls of our restaurant in Copenhagen. Driven by the same creative team and pioneering spirit, we develop products that allow people around the world to experience noma in their homes, bringing more deliciousness and inspiration into their everyday lives.

    🌹 Rich, deep, and sweet, or light, bright, and floral?     During last year’s summer harvest, we took some of the vinegar that we make from delicate Danish wild roses and aged it in Solera casks sourced from Acetaia San Giacomo, the historic producer from Emilia-Romagna. We also kept back a batch of Wild Rose Vinegar and reduced it to create a deliciously bright balsamic. 
  The original plan for Wild Rose Balsamic was to blend the two; balancing the dark richness of the Barrel Aged Balsamic with the high notes of the reduced batch of Wild Rose Vinegar.      In an unexpected twist, each version turned out to be so outstanding on its own that we had no choice but to bottle them both. Now you can decide which version you prefer – or, of course, you can always try both!      This is our most limited product launch ever: there are only 250 bottles of each balsamic available. Given the special nature of this release, we collaborated with a small, artisan glass blower here in Denmark to create the bottles.     ✉ This latest release sold out in under an hour!     Something very special is launching tomorrow. Given the nature of this release, we’ve collaborated with a small artisanal glass-blower here in Denmark to create the bottles for our most limited product to date. Each bottle is unique and designed to perfectly complement the aromatics within.
