Chris has been making this Carnitas recipe from Rick Bayless for years! You’ve gotta try this. So delicious. INGREDIENTS: 3 lbs pork shoulder, cut into 2 inch pieces Kosher salt 1/2 cup orange juice 6 garlic cloves, peeled and halved 4 bay leaves Heaping teaspoon Oregano 1 tsp coarsely ground pepper DIRECTIONS: Preheat your oven to 325 degrees. Place the pork shoulder in a baking dish (either a 7X11 or 9X13), and salt both sides liberally. Pour in the orange juice ( drizzle over, around and under pork), and tuck in the garlic & bay leaves. Cover the dish with foil and pop in the oven for 1.5 hours. At the 90 min mark remove the foil, and test the pork with a fork to make sure that it’s tender. If it still feels firm, put it back in the oven for another 20 with foil, then retest again. Set the temp to 450 degrees, and place back into the oven UNCOVERED until liquid has evaporated- about 30 min. Turn the meat over (rick says using a metal spatula), break into chunks and bake for another 20 min, turning the meat every 7-8 min. Until perfectly browned and golden on all sides. Take out and place into a serving dish, and sprinkle with flakey salt. Serve with tortillas, guac, onions and salsa. I’m telling you, DELISH! I brown beef is cooked and seasoned politely. I added two cans of the sloppyjoe sauce. I added some extra Worcesare and some extra brown sugar and a craft load of seasoning. Onion powder, garlic powder, oregano, basil, Italian seasoning. Now I am going to get these biscuits cut in little bites I pieces one by one on top of this sloppyjoe mist. You could certainly make your biscuits from scratch but you know, Pillsbury makes these things for a reason. They're convenient and they're fabulous. Two biscuits left from that container but first, I'm going to get all of this incorporated. They're all in little bite-sized pieces and I'm going to mix this in with my sloppyjoe meat. This is how it's looking. These last two biscuits, I'm going to cut these and kind of have on the top. So they're not going to have as much sloppyjoe sauce on them shall we say. You know there gotta be cheese. This is the kind of casserole. It's just wrong without cheese. So I'm going to cover the top in some marble coldijack cheese. This is oven ready. I am popping this in uncovered at three fifty. I think I said 350, but it was 375 and I had this in for 28 minutes. You all know I'm waiting for a sample of this. I am diving in while it is hot. I gotta get a little bit of biscuits and a little bit of sloppyjoe and of course there's cheese on all of this. Sweet baby **** balls. Make this one. I can't think of anything easier. Love you. Bye.
