1. Begin with 500g of purple-skinned garlic. Peel and trim them. This step is crucial for quick fermentation. 

2. Then, add white sugar 40g and salt 10g. Rub the garlic for two minutes. 

3. Next, place the garlic in a jar. Pour rice vinegar or white vinegar 500g into a pot, making sure to avoid using iron pot. Then, heat the vinegar without allowing it to cool.

4. Pour the vinegar directly into the jar. Cover it and leave it in a warm place or on a heating pad for two days.
