Here is the Blueberry Pie recipe. BLUEBERRY PIE 4 c. fresh blueberries (be sure they are dry) 1 c. sugar, plus 2 T for top of pie ½ c. cornstarch or plain flour if you prefer Zest of one lemon 3 T. lemon juice 2 pie crust (deep dish) frozen or homemade Toss berries with cornstarch, and then stir in sugar, zest and lemon juice Brush pie crust with an egg wash (one egg beaten w/ 1 t. milk) Pour in pie mixture Place top crust on pie and brush with egg wash. Seal edges of crust with a fork all the way round. Sprinkle top with sugar Place on a cookie sheet and Bake in a 400 degree oven for 45 or 50 minutes. If the edges get too brown use a pie cover or some aluminum foil. Serve with a scoop of vanilla ice cream. ENJOY!
