Ingredients:
-2 tbsp tapioca starch or mochiko
-1 tbsp sugar
-1/4 cup milk 

Mix all ingredients in a shallow, microwave safe dish. Cover and microwave for 1 minute. Serve immediately!

This recipe makes just enough to use as toppings for about two coconut jelly jars (like Yezi or Melo Melo). After tasting the mango mochi coconut jelly, I realized that the “mochi” was actually tapioca, so to emulate the coconut jelly dessert you’ll want to use tapioca starch. If you want, you can substitute mochiko for a slightly different texture that’s more like the mochi you find in Japan.
