I use strawberry confit in many of my desserts, from tarts to mousse cake or even in croissants! It's always better to mix together a bit of sugar with the pectin to avoid any lumps. 
To make sure that pectin will jellify your confit, you need to use acidity, it could be lemon juice or vinegar.

Ingredients

- 250 g strawberries
- 35 g sugar (1) 
- 4 g pectin (NH)
- 10 g sugar (for pectin)
- 1 tbsp lemon juice
