Cotechino Modena

Cotechino Modena or Cotechino di Modena is a variety of sausage from Modena, Italy and has PGI status. Zampone Modena is closely related and also has PGI status.

Cotechino dates back to around 1511 to Mirandola, where, whilst besieged, the people had to find a way to preserve meat and use the less tender cuts, so made the cotechino, but by the 1700s it had become so popular it replaced the yellowish sausage that was around at the time.


Cotechino is often served with Lentils or Cannellini beans with a sauce.
