MimicCreme is a nut-based cream substitute that is kosher and made without lactose, soy, or gluten. It was invented by Rose Anne Jarrett, wife of jazz pianist Keith Jarrett, to address his dietary restrictions.[1] First produced commercially in January 2007 in Albany, New York, by Green Rabbit LLC,[2] MimicCreme is primarily marketed toward vegans as an alternative to dairy products.[3] There are three versions available: unsweetened; sweetened with sugarcane; and sugar-free sweetened, which is sweetened with a natural non-sugar sweetener.

MimicCreme was awarded "The Best New Product" in the consumables catgeory at the June 2007 National Association of Chain Drug Stores (NACDS) show in Boston.[4] It also received the "Best in Show" award at the 2008 Expo West, a natural product trade show.[5]

It has a two-year shelf life and once opened will remain stable in the refrigerator for 7-10 days.

Ingredients

Unsweetened: purified water, almonds, cashews, dipotassium phosphate (a natural mineral salt), bicarbonate soda, rice starch, salt.

Sugar-Free Sweetened: purified water, erythritol (a natural sugar alcohol), almonds, cashews, maltodextrin, dipotassium phosphate (a natural mineral salt), tapioca starch, guar gum, bicarbonate soda, salt.

Sugar-Sweetened: purified water, sugar (non-bone char), almonds, cashews, maltodextrin, dipotassium phosphate (a natural mineral salt), tapioca starch, guar gum, bicarbonate soda, salt.[6]
