Cucumber Salad #Recipe

I had a bumper crop of cucumbers on our farm this year, and they are still going strong. Are you like me and need to use up those summer veggies? Check out this easy recipe of the month that is a fan favorite in our home.


Ingredients

  • 1 large or 2 medium cucumbers sliced and then slices cut in half
  • 1 pint of cherry tomatoes cut in half
  • 1/2 sweet onion diced
  • 1 handful fresh basil shredded
  • 8 ounces fresh mozzarella cheese diced
  • Balsamic vinegar salad dressing to taste

Directions

1) Combine all ingredients in a large bowl
2) Chill for at least 30 minutes
3) Enjoy!
